 One day Hands-On Cooking classes 

 Can be booked for any date, single bookings welcome,

minimum 2 persons to start the class,

 2 to 5 persons        Euro 85,00 per person

6 persons or over    Euro 75,00 per person

10 persons or over  Euro 65,00 per person

The price includes recipes in english,  beverages during the class, the meal with wine.

Classes last about 3 hours plus the meal. 

 The Tuscan Cooking Class
Praparation for Cantuccini making fresh pasta and cakes! panzanellaCrostini ai fegatini

Hands on tuscan cooking class about typical Tuscan Cuisine, we will make crostini ai fegatini,

crostini alle melanzane, al pomodoro, Panzanella: the famous tuscan bread salad.

We will hand make the local vegetable ravioli and a delicious aromatic meat ragù from Lucca with unusual spices, for main dish Arista di Maiale: loin of pork with typical tuscan herbs.

For dessert we will make Cantuccini also know as "Biscotti"

 The Fish Class (Euro 10 extra per pers. for the more expensive ingredients)

8.00 am Trip (optional extra Euro 10 each) to the grocery and fish store to see italian vegetables, herbs and fruit, salami and cheeses, but mainly to learn how to recognize fresh fish and less then fresh fish! See different types of fish and what they are used for. Return to the hotel and start the cooking class with 4 fish appetizer, 3 seafood pastas, 3 fish main courses and dessert

 The Main Ingredients and Sauces Class

Hands on cooking lesson with Chef Paolo Monti followed by lunch. This class is very important, we will start with lesson on the origins of the Cucina italiana, the main ingredients, fresh herbs, an Extravirgin Olive Oil seminar, explaining how extravirgin olive oil is made and taste a dozen different olive oils to recognize the differences according to where they are produced. We will then start cooking some of the most important sauces of Italian and Tuscan cooking. Have a light breakfast! because we will make 14 recipes and we will taste all of them.

An entertaining class for all the family! Learn to make all kinds of fresh pasta, white,

green and black pasta, fettuccine, ravioli. Learn also the art of making the perfect pizza dough! Also 2 types

of focaccia, 4 kind of pizzas and Dessert Pizza!

Cozze al Sambuca e Panna, Mussels in crema and Sambuca liqueur Mozzarella di Bufala al Coulis di Pomodoro crudo -  Buffalo milk mozzarella with a blended raw tomato sauce

Spaghettini al frullato di mozzarella, pomodoro e peperoncino - Thin spaghetti with a creamy mozzarella and tomato sauce

Risotto allo zafferano, gamberetti e rucola - risotto with shrimps, saffron and rucola

Paccheri al pesto di pistacchi e gamberetti - thick pasta with pistachio pesto and shrimps

Filetto di maiale o Vitello alla crema e scorza di limone - tenderloin of pork in a cream and lemon sauce  

Filetto di maiale al vino rosso, balsamico e uva, aroma di tartufo bianco- tenderloin of pork with red wine, balsamic vinegar grapes and truffle oil 

Tonno alla salsa di lattuga - Grilled peppered tuna fillet in a lettuce sauce

Panna cotta salsa ai frutti di bosco, caramello- Cream dessert with berries sauce and caramel toffee sauce
