Professional "Knowing Meat" cooking class
€ 150 per person, mnimum 4 persons - reserve at least one week before
a professional meat cooking course, 5 hours including going to the wholesale meat market, learning about different meats and in particular beef, different cuts, different aging different species of cows. How to cook it, we will make also 2 types of meat sauce, white and bolognese, veal escalope and milanese veal chop

Exploring Meat course
8.00 am visit the wholesale store’s butcher section, explanation about the different types of beef breeds, the aging, the cuts of meat, veal, pork, lamb.
We will buy some meat for the lesson. We will also visit a local butcher shop to see how they display the meat and see them serving customers, we will buy some meat from them too.
We go to the cooking school and watch a video or two on butchering a cow and a pig. We will debone a loin of pork and a leg of lamb and cook steak, tagliata, various types of meat sauce, veal scaloppine, veal chop and roast pork. We will also make pancetta toscana from scratch.
After that we will taste everything!
