4 Hours - € 85 per person
Classes daily at 10 am or 4 pm 
This class is very important, we will start with lesson on the origins of the Cucina italiana, the main ingredients, fresh herbs, an extra virgin Olive Oil seminar, explaining how extra virgin olive oil is made and taste a dozen different olive oils to recognize the differences according to where they are produced. We will then start cooking some of the most important sauces of Italian and Tuscan cooking. Have a light breakfast! because we will make 14 recipes and we will taste all of them.
  Tuscan Cooking class                                           4 hours  - € 85 per person

Cooking class about typical Tuscan Cuisine, we will make crostini ai fegatini, crostini alle melanzane, al pomodoro, Panzanella: the famous tuscan bread salad. We will hand make the local vegetable ravioli and a delicious aromatic meat ragù from Lucca with unusual spices, for main dish Arista di Maiale: loin of pork with typical tuscan herbs. For dessert we will make Cantuccini also know as "Biscotti”
Risotto, veal scaloppine, carpaccio class                4 hours € 85 per person

This class takes away the fear and mistery out of making risotto! we will make 4 types of risotto, it is not at all difficult once you have seen it done!! Also Carpaccio di Manzo and Mozzarella al frullato di pomodoro, buffalo mozzarella with blended raw tomato sauce. We will also make four types of veal escalopes as well as dessert!!!
Fresh pasta and pasta sauces class                   5 hours € 95 per person

A fun class for all the family. No skill required!! We will be making fresh pasta, ravioli and gnocchi: yellow pasta with eggs, green pasta with spinach, red pasta with tomato paste and black pasta with squid ink. We will also make 2 types of ravioli: one with ricotta and spinach, the other with salmon and chives. We will make also potato gnocchi. Sauces: basic tomato sauce with canned tomatoes, used to make other sauce, a fresh tomato sauce with cherry tomatoes, THE BEST SAUCE EVER!! Amatriciana with pancetta, hot chillies and onion, mushroom and marsala sauce, lemon cream sauce
Fresh fish and seafood class                                  4 hours € 95 per person

In this class we will prepare some delicious but easy to make fish dishes, starting with the main ingredient: really fresh fish!!. Mussels with lemon, mussels with sambuca, shrimp, orange and fennel salad, tuna Tartare, spaghetti alle vongole , fetuciine with seafood and saffron, pasta with pistachio pesto and shrimps, grilled tuna with lettuce sauce, fish baked with potato, onion tomato and herbs, fish baked in foil and Panna Cotta
Advanced fish and seafood class                         4 hours € 105 per person

In this class we will prepare more elaborate fish dishes, using lobster, tuna, salmon, seafood in different ways but respecting the freshness of the main ingredient: really fresh fish!!. 4 appetizers, 3 seafood pasta, 5 fish main courses and Panna Cotta
